Limoncello Cupcakes

I love cupcakes. I know they are trendy, or perhaps the trendiness has passed, but I can’t help but loving everything about cupcakes – personal sized, perfect ratio of cake to frosting, and multitudes of flavors are possible.

And Limoncello cupcakes in Baking Chez Moi fulfill all of those qualities.

I was able to use some limoncelllo that friend’s made after returning from a trip to Italy.

And these were a snap to pull together, I didn’t even need the mixer! They are a simple yogurt and oil cake. They did contain cardamom, which paired nicely with the lemon.

A dollop of marmalade was put in the middle before baking. As another option, some Doristas tried lemon curd with success.

The cakes rose perfectly and had a lovely dome. A simple syrup was then brushed on the freshly baked cakes.

A small ruffle of frosting was the finishing touch.

My husband took them to work for a co-worker’s birthday where they were received with success. I love the little marmalade surprise inside.
